Bihari Litti Chokha.
Certainly! Here’s the full Recipe for Bihari Litti Chokha:-
Ingredients:-
For the Litti :–
- 2 cups whole wheat flour
- 1/2 teaspoon salt (as per your test)
- 2 tablespoons ghee or oil
- add some carom seed (as per your test)
- Water for kneading
For the Filling :-
- 1 cup roasted gram flour (sattu)
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 2 tablespoons chopped coriander leaves
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 teaspoon Ajwain (carom seeds)
- 1 teaspoon kalonji (nigella seeds)
- 1 teaspoon salt
- 2 tablespoons mustard oil
For the Chokha :-
- 4-5 large potatoes, boiled and mashed
- 2 large tomatoes, finely chopped
- 2 onions, finely chopped
- 2 green chilies, finely chopped
- 2 tablespoons chopped coriander leaves
- 1 tablespoon mustard oil
- Salt to taste
- Lemon juice (optional)
Instructions:-
For the Litti :-
- In a large bowl, mix the whole wheat flour, salt, and ghee (or oil) together.
- Gradually add water and knead the mixture into a firm dough. Cover the dough and let it rest for 30 minutes.
For the Filling :-
- In a mixing bowl, combine the roasted gram flour (sattu), chopped onion, green chilies, coriander leaves, ginger paste, garlic paste, ajwain, kalonji, salt, and mustard oil.
- Mix well until the mixture resembles breadcrumbs and the ingredients are evenly incorporated.
For the Chokha :-
- In a mixing bowl, combine the mashed potatoes, chopped tomatoes, chopped onions, green chilies, coriander leaves, mustard oil, salt, and lemon juice (if desired).
- Mix well until all the ingredients are combined and the chokha is well seasoned.
To Assemble and Cook the Litti :-
- Preheat your oven to 375°F (190°C). Alternatively, you can cook the litti on a tawa or over a charcoal grill.
- Divide the dough into small lemon-sized balls.
- Take a dough ball and flatten it into a small disk with your hands. Place a spoonful of the filling mixture in the center of the disk.
- Gather the edges of the dough and seal it, forming a ball-shaped dumpling. Repeat with the remaining dough and filling.
- Place the stuffed litti on a baking sheet and bake for about 25-30 minutes, or until they turn golden brown. Alternatively, you can cook them on a tawa or grill until they are cooked through and browned on all sides.
- Once the litti are cooked, remove them from the oven (or tawa/grill) and brush them with ghee for added flavor.
- Serve the litti hot with the chokha on the side.
